3 Ingredient Protein Pancakes
Honestly, what could be better?
A simple, 5-minute breakfast is a big win in my book! ESPECIALLY if you have kids and want to whip them up something YUMMY, HEALTHY and QUICK!
Ingredients:
- 1 scoop whey protein powder (I use vanilla but cookies and cream is YUM)
- 1 ripe banana (mashed)
- 2 eggs (yolk and whites separated)
–> 1/2 tsp baking powder (optional but keeps them fluffy)
–> Toppings of choice (berries, yoghurt, maple syrup)
Method:
- In a separate bowl, whisk the whites so they become nice and fluffy
- Add the remaining ingredients to a separate bowl and whisk together until smooth and combined
- Fold the egg whites into the egg yolk mixture until combined
- Heat a pan over medium heat and spray with olive or coconut oil
- Add 1/4 of the batter into the skillet, turning when the first side is lightly browned
- Repeat for the remainder of the batter. Serve immediately.
Serves 1. (or 2 little kiddies).
