Mexican! A crowd favourite. Versatile, easy to throw together, nutrient-dense, a good meal prep dish, endless options of dairy-free, gluten-free, vegetarian… oh, and avocado, need I say more?

 

A Mexican dish is featured in my meals almost weekly, especially this nachos recipe.

 

Give it a go!

 

Base:

Baby spinach or mixed salad leaves

 

Filling:

500g extra lean beef mince (can leave out if you’re vegetarian/vegan *see notes)

1 can of beans, drained and rinsed (black beans, kidney beans, or mixed beans work well)

1 tbsp extra virgin olive oil

1 red onion, diced

1 shallot onion, diced

2 gloves purple garlic, minced

1 lime

1 lemon

2 tsp cumin

1 tsp paprika

½ tsp onion powder

½ tsp salt

½ tsp dried oregano

 

Optional:

1 carrot, shredded or finely chopped

 

Method

  1. Heat oil in a large pan, brown onion, add mince and press down to cover the base of the pan. Once one side is cooked, turn and cook the second side, adding garlic, beans and carrot
  2. While meat is cooking, in a bowl add dried herbs, mix together and sprinkle over mince
  3. Squeeze ½ lime and ½ lemon into the pan, stir, turn the heat to low and simmer
  4. Make salsa and guacamole

 

Salsa

1 red capsicum, cubed

1 cucumber, cubed

2 tomatoes, cubed

1 cup corn (optional)

1 green jalapeno, sliced (optional)

Fresh coriander (measure with your heart)

Lime juice

Pinch of salt

½ tsp black pepper

 

Method

  1. Combine all ingredients in a bowl
  2. Squeeze over second ½ lime, stir through salt, pepper and fresh coriander

 

Chips

1 packet of wraps (I use a black rice wraps or mountain bread at 1 wrap per person)

 

Method

  1. Bake in oven at 200*C until crispy, break into chip size pieces

 

Guacamole

1 avocado

2 tbsp Greek yoghurt (optional)

Lemon juice

Chilli flakes (optional)

 

Method

  1. In a bowl, squeeze the second ½ lemon over the avocado and mash
  2. Stir through Greek yoghurt
  3. Add chilli flakes if desired

 

Layer it together

  1. In a bowl, place salad leaves and add chips around the side
  2. Add filling (optional choice to sprinkle cheese on top, crumbled feta works a treat)
  3. Top with salsa and guac
  4. Enjoy!

Notes

* If subbing out mince, add another can of beans to even out portions
